Ingredients
- 1/2 cup of butter (softened)
- 1 cup of light brown sugar
- 3 tablespoon of granulated sugar (regular white sugar)
- 1 large egg
- 2 tablespoon of vanilla extract
- 1 3/4 cup all purpose flour
- 1/2 teaspoon of baking soda
- 1/2 teaspoon of baking powder
- 1/2 salt
- 1 cup of chocolate chip cookies
- 1 1/2 teaspoon of instant espresso coffee powder (I used Nescafe)

How to Make
- Preheat the oven to 375 degrees Fahrenheit (190 C)
- Mix the butter, brown sugar, and granulated sugar in a bowl.
- If you have an electric mixer beat on medium speed for 30 seconds, until the mixture is fluffy.
- (Personally I beat it by hand)
- Then add the egg and the vanilla extract (beat for another 30 seconds, in medium speed)
- In the mixing bowl add the flour, baking soda, baking powder, and salt.
- Mix in for 15 seconds in slow speed.
- Add the chocolate chips and espresso and mix for another 15 seconds.
- Prepare pan with parchment paper.
- Use a 1 ounce cookie scoop (or a 2 tablespoon measure)
- Drop the cookie dough onto the parchment paper (3 inch apart from each other)
- Gently press down on the dough with the back of a spoon to spread out to a 2 inch circle.
- Bake for 10-12 minutes
