Quinoa Salad Recipe

Ingredients

  • 1 cup of Organic Quinoa
  • 2 cups of water
  • 1 cup halved cherry tomatoes
  • 1 cup of peeled and diced cucumbers
  • 2 tbsp. chopped kalamata olives
  • 1 tbsp. chopped mint
  • 1 cup chopped parsley
  • 1/2 cup of feta cheese
  • 1 tbsp. olive oil
  • 1 tbps. lemon juice
  • 1/8 tsp. kosher salt

How to Make

  • Preparing the quinoa
    • Rinse the quinoa
    • Bring 2 cups of water and 1 cup of quinoa to boil
    • Add 1 tsp. salt
    • Cover the pot with a lid and cook on low heat for 15 min.
    • Remove from heat, keeping the lid on let it rest for 3-5 min
    • Add the cherry tomatoes, cucumber, parsley, mint, lemon juice, feta and olive oil
    • Fluff with a fork.
    • Enjoy!
