Ingredients
- 1 cup of Organic Quinoa
- 2 cups of water
- 1 cup halved cherry tomatoes
- 1 cup of peeled and diced cucumbers
- 2 tbsp. chopped kalamata olives
- 1 tbsp. chopped mint
- 1 cup chopped parsley
- 1/2 cup of feta cheese
- 1 tbsp. olive oil
- 1 tbps. lemon juice
- 1/8 tsp. kosher salt
How to Make
- Preparing the quinoa
- Rinse the quinoa
- Bring 2 cups of water and 1 cup of quinoa to boil
- Add 1 tsp. salt
- Cover the pot with a lid and cook on low heat for 15 min.
- Remove from heat, keeping the lid on let it rest for 3-5 min
- Add the cherry tomatoes, cucumber, parsley, mint, lemon juice, feta and olive oil
- Fluff with a fork.
